Braised pork belly (卤肉)


INGREDIENTS 材料

2 lb pork belly with skin
3 shallots
5 thick slices ginger
3 whole garlic cloves
3 star anise
10 gm white peppercorn
10 gm szechuan peppercorn
1 stalk green onion
1 cup light soy sauce
2 tbsp dark soy sauce
3 tbsp sugar
1 tbsp brown sugar
1 tbsp Chinese Five Spice Blend (available in Asian market)
800ml water
5 hard-boiled eggs (shells removed)
 

 
 

METHOD 做法

(1)  Clean pork belly thoroughly.  Bring a pot of water to boil.  Blanch pork belly for 20 minutes.
(2)  Remove pork belly, and rinse under cold water.  Use a very sharp knife, scrap off any hair or dirt from skin.  Cut pork belly into thick slices, about 1.5 inches thick.  Set aside.
(3)  Heat 1 tbsp oil in a stainless steel pot.  Under medium heat, add shallots, shallots, ginger.  Saute till fragrant.
(4)  Add peppercorns and stir fry for 1 minute.
(5)  Add water and other seasoning ingredients.  Bring to a boil and add pork belly.
(6)  Simmer under medium heat for 1 hour.  For about 45 minutes later, add hard-boiled egg.
(7)  Turn off the heat and close with lid.  Let the pork belly sit for another 1 hour.
(8)  Serve and enjoy with rice.

Fish Maw soup (Hee Peow Soup) 鱼鳔汤


INGREDIENTS 材料

1 fish maw, soaked till softened (fish maw = fried fish bladder, available in Chinese Medicine shop)
1/2lb minced pork
1 cup lettuce
few fish dumplings or fish balls  (can be substituted with prawns ball)
2 cups chicken stock
salt and pepper to taste

 

METHOD 做法

(1)  Soak fish maw till softened.  Cut fish maw into pieces.
(2)  Marinate minced pork with little salt, pepper, soy sauce, cooking wine and sesame oil.  Set aside for 15 minutes.
(3)  Cut lettuce into thin slices.
(4)  Bring the soup to a boil in a pot.  Using hands, roll minced pork into balls, and cook them in the soup.  Boil till pork balls are cooked.
(5)  Add lettuce and fish dumplings.  Boil for another minute.
(6)  Add fish maw and seasoning.  Boil for another 2 minutes.
(7)  Serve hot and enjoy!
 

Tofu with Shrimps (虾仁豆腐)


INGREDIENTS 材料 (Serves 4)

1 lb shrimps (heads and shells removed)
2 blocks of firm tofu
1 tsp sea salt
1 egg, beaten
handful of cilantro
1/4 cup chicken stock
1/2 tsp salt
cornstarch mixture (1 tbsp water mix with 1 tbsp cornstarch)
 

 
 
 
Marinate for Shrimps
2 tsp corn starch
1 tsp cooking wine
1/2 tsp salt
1 egg white
 

 

METHOD 做法

(1)  Wash and clean shrimps.  Mix shrimps with marinate ingredients and set aside for 30 minutes.
(2)  Cut tofu into 1 x 1/2 inches slices and arrange them on plate.  Sprinkle them with sea salt.  Gently coat tofu with beaten egg.
(4)  Heat 3 tbsp oil in frying wok.  Using medium heat, stir fry shrimps for 30 seconds.  Remove shrimps and set aside.
(5)  Heat 1 tbsp oil in frying wok, and pan fry tofu till golden brown on both sides.
(6)  Arrange tofu on serving plate.
(7)  Heat 1 tsp oil in clean wok.  Add chicken stock, cilantro and salt to hot wok.  Add cooked shrimps and cornstarch mixture.  Stir fry till mixture thickened.  Turn off the heat and pour them into arranged tofu.
(8)  Serve hot and enjoy!

Chinese Spicy Chicken (大千子鸡)


INGREDIENTS 材料  Serves 4

1 lb boneless chicken breast, cut into cubes
1 green or red pepper, cut into cubes
few dried chillies (seeds removed and soaked in warm water)
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp chopped green onion
1 tbsp hot bean paste
1 tsp red chilli oil
 

Chicken Marinate ingredients
1 tbsp cooking wine
1 tsp sesame oil
1 tbsp corn starch
1 tsp light soy sauce
dash of white pepper
little salt
 

 
 
Seasoning sauce
1 tbsp light soy sauce
1 tbsp cooking wine
1 tbsp sesame seed oil
1 tbsp water
1 tsp sugar
1 tsp corn starch
dash of white vinegar
little salt

 

METHOD (做法)

(1)  Marinate chicken with marinating ingredients, and set aside for 30 minutes.  Combine all sauce ingredients in a bowl, and set aside.
(2)  Heat 1 tbsp oil in wok.  Add red chillies and stir fry under low heat till fragrant.  Remove red chillies only, and set aside.
(3)  In the same wok with oil, add marinated chicken pieces and cook till meat turns white.  Remove and set aside.
(4)  Heat 1 tbsp oil in another pan.  Add minced garlic, ginger and green onion.  Stir fry till fragrant.
(5)  Add hot bean paste and chicken.  Stir fry for a minute.
(6)  Add red or green pepper and stir fry for another minute.
(7)  Add seasoning sauce, red chillies and chilli oil.  Stir fry till chicken is coated with sauce.
(8)  Turn off heat when sauce has reduced.  Transfer chicken to serving plate.
(8)  Garnish with cilantro and serve HOT!

Banana and Chocolate chips Muffins


INGREDIENTS (MAKE 12 muffins)

2 1/4 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup fine sugar (not powdered sugar)
2 large very ripe bananas, mashed (very ripe = banana skin has turned almost black)
1/2 tsp banana flavor
1/2 tsp vanilla flavor
1 egg, beaten
5 tbsp water
5 tbsp vegetable oil
1/2 cup semi sweet chocolate chips

 

METHOD

(1)  Preheat oven to 350 F.  Line 12 paper muffins cup in muffin pan.
(2)  Shift all dry ingredients together (flour, baking powder, baking soda, salt) into a large bowl.
(3)  Stir in sugar and mix together. This is dry ingredients.
(4)  Combine mashed bananas, egg, water, oil, banana and vanilla flavor in another bowl.  This is wet ingredients.
(5)  Pour wet ingredients into the dry ingredients, and gently mix with spatula.
(6)  Fold in chocolate chips.  Using an ice-cream scoop or large spoon,  fill the muffin cups about 3/4 .
(7)  Bake in a preheated oven for 20-22 minutes, until the muffins are risen.  Stick a skewer into one of the muffins.  If it comes out clean, the muffins are done.  When you press the muffins, they spring back.
(8)  Place muffins on wire rack to cool.
(9)  Serve and enjoy!

Braised Spare Ribs in Coffee flavor (咖啡排骨)


INGREDIENTS  材料

2 lbs pork spare ribs (cut into sections)
1 tsp baking soda
1 cup water
1 tsp minced garlic
 

 
 
Marinate ingredients
1 tbsp cooking wine
1 tbsp light soy sauce
2 tbsp oyster sauce
1 tsp sugar
1 tbsp custard powder
1 tbsp corn flour
1 tbsp tapioca flour
1 tbsp sesame oil
1 tsp sugar
 

 
Glazing sauce
 
2 tbsp plum sauce
2 tbsp chill sauce (Maggi chilli sauce)
1 tbsp dark soy sauce
1 tbsp sugar
 
1/2 cup of coffee (1 tbsp instant coffee powder mix with 1/2 cup of hot water)
 

 
 

METHOD  做法

(1)  Combine spare ribs, baking soda and water, and leave aside for 1 hour.
(2)  Wash and rinse spare ribs in cold water.
(3)  Combine all marinate ingredients in a bowl.  Mix spare ribs with marinate sauce and set aside for 2 hours.
(4)  Heat frying oil in wok.  Deep fry spare ribs till golden brown.  Double fry for extra crispy.
(5)  Combine all glazing ingredients in a bowl, except coffee.
(6)  Heat 1 tbsp oil in a clean pan.  Add minced garlic and stir fry till fragrant.  Add glazing sauce and coffee.
(7)  Boil the sauce and add fried spare ribs.  Mix well till sauce has thickened.
(8)  Serve HOT and enjoy with rice!

Harsh brown with eggs


INGREDIENTS

2 russet potatoes, peeled and shredded thinly
2 eggs (adjust to your serving size)
1 cup green pepper, minced
1 cup shredded cheddar cheese
salt and pepper to taste

 

METHOD

(1) Preheat oven to 430 F.
(2)  Heat 1 tbsp oil in skillet pan.
(3)  Wash and peel potatoes.  Grate the potatoes into fine shreds, and quickly add into hot pan.
(4)  Cook until bottom of potato turns crispy and golden brown.
(5)  Add shredded cheese FIRST, then crack eggs and sprinkle green pepper.
(6)  Transfer skillet to oven, and bake until cheese are melted and eggs are cooked.
(7)  Sprinkle with salt and pepper.  Serve HOT and enjoy with sour cream.

Pigs in a Blanket


INGREDIENTS

1 refrigerated crescent roll dough (Pillsbury brand) or any pastry dough
1 package cocktail franks (about 30 pieces)
1 egg
1 tsp heavy cream
2 tbsp honey mustard sauce
1 tbsp honey
few dash of hot sauce (tabasco)

 

METHOD

(1)  Preheat oven to 375 F.  Spray baking sheet with oil, or lined with parchment paper.
(2)  Beat egg and heavy cream in a bowl.  Set aside.
(3)  Combine mustard sauce, honey and hot sauce in a bowl.  Set aside.
(4)  Sprinkle flour on a clean table.  Remove pastry dough from can, and roll flat on table.
(5)  Cut the dough into 3 inches wide of strips, or wide enough to wrap cocktail franks.
(6)  Coat each strip of dough with honey mustard sauce, and carefully roll the dough up.
(7)  Place each seam side down on baking sheet.
(8)  Brush each piece of pastry with egg wash.
(9)  Bake for 15 minutes or until the pastry is golden brown.
(10)  Serve warm and enjoy!
