Chinese-style General Tso Chicken (左宗党鸡)


Ingredients

1/2 lb boneless chicken thighs, with skin on, cut into bite sizes
2 red chillies, minced
1 tsp minced ginger
1 tsp minced garlic
Cornstarch mixture, mix 1 tbsp cornstarch with 2 tbsp water
 
Marinate ingredients for chicken meat
1/3 tsp soy sauce
1 tbsp corn starch
1 tsp pepper
 
Sauce Ingredients
1 tbsp soy sauce
1/3 tsp dark soy sauce
1/2 tbsp dark vinegar
1/2 tbsp cooking wine
2 tbsp water
1 tsp sugar
1tsp sesame seed oil
 

METHOD

(1)  Marinate chicken for 1 hour and set aside. 
(2)  Heat frying oil in a wok.  Deep fry chicken meats till golden brown and crispy.  Remove and set aside.
(3)  Heat 1 tbsp oil in a wok.  Add minced garlic, ginger and red chilli.  Stir fry till fragrant.
(4)  Add sauce ingredients and bring to a boil.
(5)  Add fried chicken pieces, and stir fry till chicken is well coated with sauce. 
(6)  Add cornstarch mixture and quickly stir fry till sauce is thickened.
(7)  Turn heat off, and transfer to serving plate.

Stewed Potatoes with Chicken (土豆烧鸡)


Main ingredients:  Chicken, Potatoes

INGREDIENTS

3 potatoes, peeled and cut into chunks (rinsed twice and soaked in cold water)
chicken meat with bones (or chicken wings), chopped into bite pieces
2 green onions, halves
few ginger slices
dried red chillies (soaked and squeeze dry) optional
Seasoning:  1 tbsp rice wine, 2 tbsp soy sauce, 2 tsp sugar, 1 tsp salt, 1 cup of water
Sesame seed oil
 

METHOD

(1)  Drain potatoes and set aside.
(2)  In a pan, heat 1 tsp oil till hot.  Add green onions, ginger slices and dried chillies.  Stir fry till fragrant.  
(3)  Add chicken pieces and stir fry till almost cooked.  Remove and set aside on a plate. 
(4)  In a pan, heat 1 tsp oil till hot.  Add potatoes, and stir fry for 5 minutes or until potatoes are golden brown.
(5)  Add chicken and seasoning.  Simmer for 8 minutes or till liquid is reduced.
(6)  Drizzle with sesame seed oil and serve hot.

Szechuan Chicken Wings (川味辣鸡翅)


INGREDIENTS

10 chicken wings, separate joints
few fresh red chilli or dried red chilli (for dried chilli, soak till softened)
10 Szechuan peppercorns
few green onions, halves
3 star anise
Seasoning:  2 tbsp soy sauce, 1 tbsp rice wine, 1 cup of stock, dash of white pepper, 1 tsp salt, 1 tsp sugar
 

METHOD

(1)  Add about 1 tbsp oil in a non-stick frying pan.
(2)  Add chicken wings, and pan fry till both sides are golden brown.
(3)  Add red chilli, Szechuan peppercorns, green onion and star anise.
(4)  Stir fry till fragrant.
(5)  Add seasoning ingredients.  Turn heat to medium high, cover with lid, and simmer for 7 minutes.
(6)  Once the liquid is reduced, remove the lid and increase to high heat.
(7)  Add 1/2 tsp sesame seed oil, and stir fry for another 2 minutes.
(8)  Serve hot or cold with rice.

Fried chicken wings in fermented black beans 豆鼓鸡翅


INGREDIENTS (材料)

10 chicken wings or chicken parts (十只鸡翅)
Marinate chicken with 1 tbsp soy sauce, 1 tsp sugar, 1 tsp sesame seed oil, 1 tsp white pepper, 1 tsp cooking wine and 1 tbsp corn starch. (鸡翅已酱油,糖,芝麻油,酒,胡椒腌至入味)
1 stalk green onion, finely minced (青葱)
1 tbsp red chili, finely minced (红辣椒)
1 tbsp fermented black beans, rinsed and finely minced (黑豆鼓)
1 tsp minced garlic (葱末)
 

METHOD

(1)  Marinate chicken wings for 3 hours or overnight.  
(2)  Heat frying oil in wok till hot.  Coat chicken wings with cornflour, and set aside on plate.
(3)  Deep fry chicken wings till golden brown.  Double fry for extra crispy.
(4)  Place fried chicken wings in a plate.
(5)  Heat 1 tsp oil in a clean pan.  Add garlic, red chili and black beans.  Stir fry till fragrant.  
(6)  Add green onion and chicken wings.  Stir fry till chicken wings are coated with black bean ingredients.
(7)  Serve hot and enjoy!
 
 

Chinese Crispy Chicken (椒麻鸡)


INGREDIENTS

4 boneless chicken drums, with skins on
chicken marinate ingredient:  1 egg, 1 tbsp rice wine, 1 tsp white pepper and 1 tsp five spice powder, and 1 tsp ginger juice.
3 tbsp cornflour and 2 tbsp plain flour
Sauce:  2 tsp white vinegar, 2 tsp black vinegar, 1 tbsp sugar, 1 tbsp soy sauce, 1 tbsp warm water, 1/2 tsp sesame seed oil, 1 tsp minced garlic,  1 tsp minced cilantro leaves, 1 tsp minced red chili or chili powder.
 

METHOD

(1)  Marinate chicken and leave aside for 1 hour.
(2)  Dredge chicken pieces with mixture of cornflour and plain flour.
(3)  Heat frying oil in wok, and fry chicken pieces on both sides till golden brown.  Transfer to plate.
(4)  Mix sauce ingredients together and set aside.
(5)  Chop chicken into pieces, and place on serving plate.
(6)  Pour sauce over the chickens and serve hot!

Chinese Spicy Chicken (大千子鸡)


INGREDIENTS 材料  Serves 4

1 lb boneless chicken breast, cut into cubes
1 green or red pepper, cut into cubes
few dried chillies (seeds removed and soaked in warm water)
1 tbsp minced garlic
1 tbsp minced ginger
1 tbsp chopped green onion
1 tbsp hot bean paste
1 tsp red chilli oil
 

Chicken Marinate ingredients
1 tbsp cooking wine
1 tsp sesame oil
1 tbsp corn starch
1 tsp light soy sauce
dash of white pepper
little salt
 

 
 
Seasoning sauce
1 tbsp light soy sauce
1 tbsp cooking wine
1 tbsp sesame seed oil
1 tbsp water
1 tsp sugar
1 tsp corn starch
dash of white vinegar
little salt

 

METHOD (做法)

(1)  Marinate chicken with marinating ingredients, and set aside for 30 minutes.  Combine all sauce ingredients in a bowl, and set aside.
(2)  Heat 1 tbsp oil in wok.  Add red chillies and stir fry under low heat till fragrant.  Remove red chillies only, and set aside.
(3)  In the same wok with oil, add marinated chicken pieces and cook till meat turns white.  Remove and set aside.
(4)  Heat 1 tbsp oil in another pan.  Add minced garlic, ginger and green onion.  Stir fry till fragrant.
(5)  Add hot bean paste and chicken.  Stir fry for a minute.
(6)  Add red or green pepper and stir fry for another minute.
(7)  Add seasoning sauce, red chillies and chilli oil.  Stir fry till chicken is coated with sauce.
(8)  Turn off heat when sauce has reduced.  Transfer chicken to serving plate.
(8)  Garnish with cilantro and serve HOT!
