Chinese Fried Rice(炒饭)


INGREDIENTS

5 bowls of cold rice (overnight rice for fried rice)
1 strip of homemade char siew (see recipe) or store-bought char siew (available in Chinese stores)
1 cup frozen mixed vegetables
2 eggs, lightly beaten
2 stalks of green onion, sliced thinly
1 tbsp minced garlic
Seasoning:  1/2 tbsp fish sauce, 1/2 tsp salt, dash of white pepper
 

METHOD

(1)  Heat 1 tbsp oil in cooking wok.  Add minced garlic and stir fry till almost golden brown.
(2)  Add mixed vegetables and char siew.  Stir fry till combined.
(3)  Push the mixed vegetables and char siew to one side, and add beaten eggs.
(4)  Once eggs starting to cook, combine everything together.  Stir fry for another minute.
(5)  Add rice and press gently with wooden spoon to loosen the rice. 
(6)  Stir fry till rice is thoroughly mixed with other ingredients.
(7)  Add all seasoning and green onion, stir fry for another minute. 
(8)  Once the rice is evenly cooked, transfer to rice cooker and keep warm.
(9)  Serve warm and enjoy!

Chicken Congee (鸡粥)


INGREDIENTS 材料 (Serves 4)

3 chicken drumsticks (or chicken breasts) – with bones
1 cup rice, washed and soaked in water for 2 hours
1/2 cup Korean sweet rice (optional)
1 slice of ginger
1 stalk of green onion

Condiments:
thinly sliced ginger
chopped green onion
cilantro (optional)
1 tsp chopped preserved radish (chye bo)
1 egg per person, in room temperature
Seasoning to taste:
soy sauce
white pepper
sesame oil

METHOD 做法

(1)  Washed chicken thoroughly, removing skin and blood.
(2)  Heat 1 tsp oil in pot.  Stir fry 1 piece of ginger slice and green onion till fragrant.
(3)  Add chicken meat and 5 cups of water.  Bring for a boil for 45 minutes.
(4)  Remove chicken. Tear the chicken meat into shreds and set aside.  Discard bones.
(5)  Add soaked rice to chicken stock, and cook for 15 minutes or until rice is soft.  Keep stirring with wooden spoon!
(6) Add shredded chicken and boil for 3 minutes.
(7)  Crack the egg in serving bowl, and pour HOT congee into the bowl.
(8)  Garnish with condiments on top.  Drizzle the seasoning ingredients to taste.
(9)  Serve HOT and enjoy!

Sweet potato porridge (番薯粥)



INGREDIENTS 材料 (Serves 4)

1 sweet potato (skin removed and chopped into chunks)
1 cup rice (washed and drained)

METHOD

(1)  Bring 4 cups of water to boil.  (You can adjust the amount of water according to your preference).
(2)  Add washed rice and boil till rice is soft and translucent (about 20mins).
(3)  Add sweet potatoes and boil till softened.
(4)  Serve hot with dishes and enjoy!
