Nonya Style Mixed Vegetables (Chap Chai/Loh Han Chai) 罗汉斋


Chinese Vegetarian dish, simple to prepare and delicious.

INGREDIENTS

1 cabbage, cut into small pieces
1 carrot, peeled and sliced
1/4 cup of Dried black fungus, soaked in water and cut in halves
handful of Dried lily flowers, soaked in water and tie in knots.
1/2 cup of Dried black mushrooms, soaked in water and cut in halves.  Reserve mushroom water.
1 transparent vermicelli (tung hoon), soaked in water to soften.
handful of snow peas, ends trimmed
few dried bean curd strips, soaked in water to soften, and fried until light brown.
 
1 tsp minced garlic
1 tbsp minced shallots
1 piece of red fermented beancurd, available in Asian grocery store.
2 tbsp oil
dash of white pepper
dash of sesame seed oil
1 tsp salt
1/2 tsp sugar
 

METHOD

(1)  Heat oil in wok.  Add garlic and shallots, and stir fry till fragrant. 
(2)  Add red fermented bean curd and stir fry till fragrant.  Add little water to dissolve beancurd if necessary.
(3)  Add cabbage, carrots, mushrooms, lily flowers, black fungus and snow peas.  Stir fry till cabbage almost softened.
(4)  Add about 1 cup of water or enough water to make gravy.  Add remaining ingredients and seasoning.
(5)  Stir fry till all ingredients are cooked.
(6)  Remove and serve HOT!  Serve well with rice.

Hot and Sour Potatoes (酸辣土豆丝)


Main Ingredient:  Potatoes

 

INGREDIENTS

3 – 5 potatoes, peeled and finely shredded
2 red chillies
1 tsp salt and 1 tsp sugar
1/4 cup white vinegar
1/8 cup black vinegar
1 tsp sesame seed oil
 

METHOD

(1)  Soak shredded potatoes in cold water for 20 minutes, repeating it twice.
(2)  Drain the potatoes, and set aside.
(3)  Add little sesame seed oil in a hot pan.  Add red chillies and stir fry till fragrant.
(4)  Add potatoes and stir fry for 5 minutes.  Add Seasoning.
(5)  Add vinegar and stir fry for 3 minutes or till sauce is absorbed.
(6)  Dish out and serve hot or cold.  Can be kept in refrigerator for up to 3 days.

The Four Kinds (炒四样)


INGREDIENTS

1 cup ground beef
1/2 cup corn kennels
1/2 cup green or red pepper, cut into small cubes
1/2 cup shelled edamame
1 red chilli, sliced (optional)
 
Ground beef marinating ingredients
1 tbsp water
1/2 tsp minced garlic
1/2 tsp Chinese cooking wine
1/4 tsp soy sauce
1/4 tsp oyster sauce
1/4 tsp sesame seed oil
1/4 tsp salt
1/4 tsp cornstarch
 
Seasoning ingredients
1/2 tsp salt
1/4 tsp pepper
 

METHOD

(1)  Marinate ground beef with above ingredients.  Leave aside for 15 minutes.
(2)  Add little oil in wok, and stir fry marinated beef till almost cooked.  Drain the excess liquid, and set aside.
(3)  Blanch corn kennels and shelled Edamame in hot water for 2 minutes.  Drain and set aside.
(4)  Heat 2 tsp oil in a clean wok.  Add red chilli (optional), red or green pepper, corn, edamame and ground beef.  Stir fry for few minutes, and well combined.  Add seasoning and stir fry for another minute.
(5)  Serve hot with rice and enjoy!
 

 

Stir fry Mixed Vegetables


INGREDIENTS (Serves 4)

1 head of broccoli
1 head of cauliflower
1 carrot
1 cup sugar snap peas
1 tbsp minced garlic
1/2 tsp sugar
1 tsp salt
dash of light soy sauce
dash of sesame seed oil
 
 

METHOD

(1)  Heat 1 tbsp oil in frying wok.  Add minced garlic and stir fry golden brown.
(2)  Add all vegetables, and stir fry for 2 minutes.
(3)  Add 1/2 cup of water and stir fry till vegetables softened.
(4)  Season with salt, sugar and light soy sauce.
(5)  Stir fry till sauce has reduced.
(6)  Add dash of  sesame seed oil, and transfer to serving plate.
(7)  Serve hot and enjoy!

Fried Bean Curd (酥炸豆包)


INGREDIENTS 材料

1 package of bean curd (cut into 3 inches wide, make about 20 pieces)
dipping sauce
1 tbsp light soy sauce
1/2 tsp minced garlic
1 tsp white vinegar
dash of red pepper flakes
dash of sesame seed oil
 

 
 

METHOD 做法


(1)  Heat frying oil till very hot.  Add bean curd sheets and fry them till golden brown.  Be careful of hot oil!!!  Cover with frying pan when frying to avoid oil scalding.
(2)  Serve hot and enjoy with dipping sauce.
 

Chinese Spinach with Medlar Seeds (杞子炒菠菜)


This is a nutritious dish for children, one of my daughter’s favorite.  Chinese Spinach is high in iron and Medlar seeds are good for the eyes.

INGREDIENTS 材料

1 lb Chinese Spinach
2 oz medlar seeds, rinsed
1 clove minced garlic
1 tsp oil
1 tsp salt
1 tsp soy sauce
1 tsp sugar
1 tsp sesame seed oil

METHOD 做法

(1)  Clean and cut Chinese spinach into 10 cm lengths.  Rinse and drain.
(2)  Heat 1 tsp oil in pan.  Fry garlic till fragrant.
(3)  Add spinach and stir fry for 5 minutes.  Add all seasoning ingredients.
(4)  When spinach is almost cooked, add medlar seeds and stir fry for 30 seconds.
(5)  Turn off the heat, and arrange spinach on serving plate.
(6)  Serve hot and enjoy!

Stir fry beef with green bean (干扁牛肉丝)


INGREDIENTS 材料 (Serves 4)

1/2 lb beef top roast, sliced into thin strips
1/4 lb green long bean (四季豆), cut diagonally into 3 inches long
1/2 cup red pepper, sliced into thin strips
1 tbsp minced garlic
1/2 tbsp shaoxing wine
1/2 tsp oyster sauce
1/2 tsp sugar
1 tsp light soy sauce
 
Beef Marinate sauce: 1 egg white, 1/4 tsp salt, 1/4 tsp soy sauce, 1/2 tbsp tapioca starch, 1 tsp cooking wine

 

METHOD 做法

(1)  Marinate beef and set aside for 2 hours.
(2)  Heat 1 tbsp oil in wok.  Add marinated beef and stir fry till beef is cooked.  Add shaoxing wine, and stir fry till wine is absorbed by the beef.
(3)  Add garlic, green bean and red pepper.  Stir fry for 5 minutes.
(4)  Add Seasoning ingredients and stir fry for another minute.
(5)  Serves with rice and enjoy!

Stir fry Green beans (芝麻四季豆)


INGREDIENTS 材料 (Serves 4)

1 lb green bean, rinsed and cut into 3 inches long (四季豆)
1 cup minced pork (绞猪肉)
toasted sesame seeds (白芝麻)
Spicy hot bean paste (辣豆瓣酱)
1 tbsp sugar
1 tsp soy sauce
1 tsp sesame oil
1 tsp salt

 
 

METHOD 做法

(1)  Marinate pork with 1 tbsp soy sauce, 1 tsp white pepper, 1 tsp sesame seed oil, and 1 tbsp cooking wine.
(2)  Heat frying oil in pan.  Fry green beans for 3 minutes under medium fire.  Drain and set aside.
(3)  Heat 1 tbsp oil in wok.  Add spicy broad bean paste.
(4)  Add minced pork and stir fry till pork turns white.
(5)  Add fried green bean and stir fry. Add 1 tbsp water.
(6)  Season with sugar, salt, soy sauce and sesame oil.
(7)  Stir fry for another 2 minutes.
(8)  Dish out and sprinkle with white sesame seed.
