Thai Spicy Long Beans


1 block of beancurd, fried and sliced thinly
1/2 lb long beans, cut into 2 inches pieces
1 cup beef, thinly sliced (optional)
4 tbsp chicken stock
1 tbsp minced garlic
1 tsp sugar
2 tbsp fish sauce
1 tsp Thai red curry paste
ground roasted peanuts for garnish (optional)


(1)  Heat 1 tbsp oil in wok.  Add long bean and stir fry for 5 minutes.  Remove and set aside.
(2)  Heat 1 tsp oil in wok.  Add minced garlic and stir fry till fragrant.
(3)  Add Thai red curry paste and stir fry till fragrant.
(4)  Add sliced beef and stir fry till cooked.
(5)  Add long bean, sliced beancurd and remaining ingredients.  Stir for another 10minutes.
(6)  Garnish with chopped peanuts, and serve.
