  • 1 box Lasagna noodle
  • 18 oz cottage cheese
  • 1 egg, beaten
  • dash of salt and black pepper
  • 1 tbsp olive oil + 1 tbsp olive oil
  • 2 lbs ground beef
  • 1 large yellow onion, chopped
  • 1 tbsp minced garlic
  • 3 stalks of celery, diced
  • 1 carrot, diced
  • 1 green bell pepper, diced
  • 1 14.5 oz can of stewed tomatoes
  • 1 8 oz can of tomato sauce
  • 2 tbsp concentrated tomato paste or 1  6 oz can of tomato paste
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 8 oz bag of mozzarella cheese
  1. Bring a pot of 4 quart water to a boil.  Soak lasagna noodle in hot water for 20 minutes or softened.
  2. Drain and carefully remove the noodle, and lay out on a single layer on a large baking sheet.  Drizzle noodle with olive oil to prevent noodles from sticking.  Cover with wet paper towel and set aside.
  3. Heat a pan with 1 tbsp of olive oil.  Add ground beef, and quickly saute beef till meat is cooked.  Drain the beef, removing excess liquid.  Set aside.
  4. Heat a clean pan with 1 tbsp of olive oil.  Add onion and garlic, and saute till onions are translucent.
  5. Add all vegetables, and stir fry for another 1 minute.
  6. Add cooked ground beef, and stir fry till combined.
  7. Add stewed tomato, tomato sauce, tomato paste, basil, parsley, salt and pepper.  Bring to a boil for 5 minutes, and stir till mixture thickened.
  8. Lower the heat, and let the meat mixture simmer for 1 hour under low heat.
  9. In a large bowl, whisk together eggs, then mix in cottage cheese, salt and pepper.  Set aside.
  10. Using 9 x 13 baking dish, spray olive oil over the sides and bottom of the dish.  Spread a little of the meat sauce in the bottom of the prepared pan. Lay half the noodles in the bottom of the baking dish, overlapping by 1/2-inch.
  11. Spread half the egg and cottage cheese mixture evenly on top. Sprinkle half the mozzarella evenly over the cottage cheese mixture. Pour half the meat sauce on top. Repeat layering in same order. Sprinkle remaining mozzarella cheese on top. Bake in center of oven under 375 F for 30 to 35 minutes until sauce is bubbling around the edges.
  12. Switch to high broil setting, and broil the cheese till golden brown for 5 minutes.  Let stand 10 minutes before serving.

Spaghetti in Meat Sauce (意大利面)


1/2 lb ground beef, 90% lean
1 small onion, minced
2 cloves garlic, minced finely
1 cup red wine
1 can of tomato sauce
1 red pepper, cut into bite size
1 tbsp heavy cream (optional)
1 tsp dried parsley
1 tsp dried sweet basil
2 tsp salt
1 tbsp sugar
1 tsp black pepper
1 handful of pasta, cooked according to package instruction
(1)  Bring a pot of water to a boil, and cook pasta according to package instruction.
(2)  While pasta is cooking, heat 1 tbsp of olive oil in a pan.
(3)  Add minced onion and garlic, and cook till it is softened for about 3 minutes.
(4)  Add red wine, and bring to a boil till wine is almost evaporated.
(5)  Add ground beef, and break them up while it is cooking. 
(6)  Add tomato sauce, red pepper and all seasoning ingredients except heavy cream, and simmer for 20 minutes.
(7)  Add heavy cream(optional) for creamy taste. Stir to combine. 
(8)  Place the drained pasta on a plate, and pour some meat sauce over the pasta.  Serve with toasted bread on the side.

Pork Chop Parmigiana (Pork Chop with Pasta)


4 thin pork chops, pat dry
little salt and black pepper
1/4 cup flour
1 egg, beaten with 2tbsp of milk
1 cup breadcrumbs or panko breadcrumbs
1 cup grated cheese (any cheese you like)
1 cup ready-made pasta sauce
cooked pasta for 4 servings


(1)  Season the pork chops on both sides with little salt and black pepper. Set aside. 
(2)  Place 3 plates on table.  Put flour in one plate, egg in another, and breadcrumbs in the third plate.
(3)  Season the flour with little salt and black pepper. 
(4)  Place the pork chop in the flour FIRST, shake to remove excess flour. 
(5)  Next, dip the pork chop in the egg mixture and then to the breadcrumb mixture.  Press the breadcrumbs firmly to the pork chops.  Leave aside, and finish the rest of pork chop.
(6)  Heat 2 tbsp olive oil in pan.  With medium high heat, fry the pork chop to golden brown about 2 minutes each side. 
(7)  Transfer the cooked pork chops to baking pans. 
(8)  Spoon 2 tbsp of pasta sauce over each of pork chop, and add grated cheese on top.
(9)  Place the baking pans in oven, and set to broil on high. 
(10)  Bake the pork chops for 2 minutes or until the cheese has melted.
(11)  Serve over cooked pasta with additional pasta sauce, and enjoy!
